I am one of those folks who believe that the first hour is the rudder of the day. What you think about all day long is what you become. Yudda, Yudda….So today I began by relaxing into my day by listening to alpha wave meditation music, saying my prayer for the day, hugging the pups and telling them I thank God for them everyday.
Then I go to my regular breakfast establishment and I’m met by a sulking hostess who makes me seat myself and hangs while reading a text message. She has seated someone at the table I usually sit at to keep the sun out of my eyes. There is usually me and one other senior citizen there everyday. So why with a hundred other tables does she pick that one to fill? Irritation begins to build. My wonderful wait staff handles things with an apology and the usual good service. Then the eggs arrive overcooked and toast floppy. New cook refuses to give the wait staff what the order states. Their frustration builds.
Then little Miss… I’m a Superstar Hostess in training, seats a table of 8 next to the only 2 customers in the place and refuses to ask the management to turn down the loud music. This prevents us from hearing the other newly arrived guest at our table. The party of eight, seemingly feeding what is a rowdy hangover, escalates their conversation by about 5 decibels. Your waitress can’t refresh your coffee for the demands of the demon possessed table of 8 and everyone’s frustration escalates.
Are you recognizing any of this yet? Anyway you eat quickly to get out of the bad ju-ju and to a calmer more appealing environment. You’ve made a choice. “Keep Calm and Carry On” as the poster goes. It’s always about our choice and no one else. We can stay and glare at the idiots. We can snap and complain to the waitress already stressed to the max. We can also call the manager report the hostess and cook who have made you pay good money to be treated like used bait. But now you have chosen to fall into the abyss with the rest of the misery around you, and poison your soul and the lovely day you started at home.
Don’t get me wrong. I have a temper like a saber tooth tiger and go dark way more often than I should. But the point is, I’m trying to make better choices on the “light” side more often now. I just feel better when I do. I always end up asking myself …if it won’t matter a 100 years from now… why bother to choose darkness in my day? I’ve discovered there is no good answer for that choice. I’m human; it will happen…but I am getting better every day at right choices!

Roasted Salmon with Herbed Yogurt
Oven 325° 25 Min Prep 25 Min Roast Serves 8
2 ½ lb Wild Salmon Fillet (salt and pepper to taste)
1 Tbsp Extra Virgin Olive Oil (EVOO)
2 tsp Dried Oregano, Crushed
1 Med Lemon Zest (set aside) and Juiced
1 Cup Greek Yogurt Plain
½ Lg English cucumber, finely chopped
3 Tbsp Minced Shallots
2 Tbsp Flat Leaf Parsley Chopped
2 Tbsp Chopped Fresh Dill weed
2 Tbsp Chopped Fresh Basil
½ Tsp Sea Salt
½ Tsp Cracked Black Pepper & Dash Crushed Red Pepper
Line a shallow baking pan with parchment lightly sprayed. Place salmon on baking sheet. Rub with olive oil Sprinkle with salt, pepper. Sprinkle with oregano. Roast for 25-30 minutes (until flaky in center).
Mix yogurt with the remaining herbs, the zest, ½ lemon juice and cucumber. Drizzle salmon with ½ lemon. Drizzle with olive oil and place a dollop of the yogurt on each serving. Garnish with additional lemon zest and parsley if desired.
Angels Among Us
I was blessed this morning to have breakfast with one of my most blessed Earth Angels! She is one of those people who make the rest of us look bad just because she has such peace with her Universe. She knows her blessing and knows the source from which they all emanate.
While the rest of us struggle to grump through our day finding fault and being incensed over the slightest of irritations, this Diva stalks joy, blessings an love like it is meant to be. She is one of those people, I am relatively sure, does not have to fear a visit from the Karma Cops.
Today I am blessed to have started my day with such a burst of sunshine. My wish for each of you is that you have more days like this always!

Greens, Sausage & Cannellini Bean Stew
1 Tbsp Olive Oil
4 3-oz. Cooked Chicken or Turkey Sausages Sliced
2 Med Onion Cut into Wedges
1 Lg 16 Oz Can of Cannellini Beans Drained
2 Tbs Fresh Thyme Leaves
3 Cloves Garlic Minced
1 Quart Chicken Stock
12 Cups Kale or Spinach (Appx 7 oz.)
2 Tbsp Balsamic Vinegar
In a large skillet add oil, onion and heat until brown (6-8 Min). Remove skillet; set aside.
In a large stew pot on medium high heat …Add beans, thyme, and garlic to the pot; cook 1 minute until warm. Add broth; bring to a boil. Add greens gradually; tossing until wilted before adding more. Cook and stir 2-3 minutes until cooked through. Add sausage mixture and vinegar; heat to simmer. Add a cup of water and simmer for one hour. Serve with corn bread or garlic crostini.
Our area has been under siege of nature with rain and gloomy days for weeks. I’ve noted that everyone seems so sleepy or tire. People are grumpy and less inclined to be cheerful. Now to top it off we’re in the cycle of a full moon.
I find during full moon cycles I tend to get inordinately sleepy and groggy for at least 3 days before until 3 days after a full moon. You Divas will know…that sleepy the first 3 months of pregnancy or the sleepy when monthly cycles hit like Thor’s hammer. Anyway I was wondering if it was just me.
I have have actually noted the calendar over the years to plot the above mentioned research! Check it out. It may explain a lot and give you relief that you do not have recurring Chronic Fatigue Syndrome. The full moon for May 2016 is the 21st. Full moons in 2016
Many cultures have given distinct names to each recurring full moon. The names were applied to the entire month in which each occurred. The Farmer’s Almanac lists several names, and explains that there were some variations in the moon names, but in general, the same ones were used among the Algonquin tribes from New England on west to Lake Superior. European settlers followed their own customs and created some of their own names.

2 Lg Ripe Avocados chopped
3 Tbs Sour Cream
3 Tbs Lime Juice
1 Lime Zested
2 Tbs Chives Chopped
1 Cup Crab Meat
½ Cup Mayonnaise
2 Tbsp Basil sliced thin
½ Med Jalapeno diced
1 Bag Baked Tortilla Chips
½ Tsp Salt
½ Tsp Pepper
In a large bowl, mash avocados to chunky consistency; mix in sour cream, with salt and pepper to taste. Spoon mixture into a clear Serving bowl creating a smooth layer. Set aside. Gently squeee crabmeat to remove excess liquid. In a small bowl, mix crabmeat, mayonnaise, basil, jalapeno and remaining ½ Tbs lime juice. Season with salt and pepper. Spoon crab over avocado mixture. Serve with chips. Serves 4
Note: This recipe is loaded with carotenoid-rich green produce and iodine-rich crab. These nutrients show very beneficial in thyroid studies.
I have been experiencing a great deal of serendipitous events lately. With the energy of the Universe changing at such a rapid rate these days is it any wonder? I’ve been dreaming (to remember) more often and the last two births I dreamed of have been announced as pregnancies within weeks.
I’ve been delayed in travel or detoured off my intended course to do another task three times lately, and in each instance, I later learned that there had been a bad wreck in the area or that some unusual traffic tie up occurred. Aborting my intended course had saved me from encountering each.
I kept getting my mental reminder to have routine work done to my car. I took it in and also paid for a travel inspection to check all systems before a trip. I found that a engine part was showing some stress and had I not found it and tended to it…my car may have broken down on the trip.
A good crone will always remind you to tune in, and turn on your “serendipity radar” at all times. A diva well tuned will save herself much hassle and often, likely be saved from stress or even worse harm.
Keep meditating and praying. This will keep your radar well tuned; and above all listen to the still small quiver within that works full time to keep you safe and stress free.
