Two Quick Appetizers for any party…….Spring is upon us and this is a timely spring/summer treat.


2 Pkgs        4 oz Smoked Salmon

2 Pkgs       8 OZ. Cream Cheese

½ lg           Lemon Juiced & Zested

8 Sm           Green Onions Diced

½ tsp         Hot Sauce (to taste)

Shred Salmon and mash into cream cheese. Add other ingredients and mix thoroughly.

BABA GHANOUSH (Mediterranean Eggplant Dip)

  • 2     large eggplant

  • 2     tablespoons tahini sauce

  • 5     cloves garlic, minced

  • 1      lemon, juiced

  • 1/2  teaspoon red pepper flakes (optional)

  •  1/2  Kosher Salt to taste

  • 2     tablespoon olive oil, or to taste

  • 1 pinch dried parsley flakes, for garnish

  • Preheat oven to 400 degrees F (200 degrees C). Arrange oven racks so you have one low and one high in the oven.

  • Cut  the eggplant in half and place into an oiled baking dish.

  • Roast in preheated oven on the lower rack until the eggplant is completely shrunken and soft, about 40 minutes. Move dish to higher rack and continue baking until the skin is charred, about 5 minutes more. Let eggplant cool until cool enough to handle.

  • Peel and discard skin from eggplant. Put eggplant into a bowl; add tahini, garlic, lemon juice, red pepper flakes, and salt. Stir until ingredients are evenly mixed. Drizzle olive oil over the baba ghanoush and garnish with parsley.

Serve with a bowl of pita chips, pita bread or crostini

Meditation for Our Future…

Let us confess our lack of meditation. Lack of meditation is proof of a lack of faith in the Universe. It is the symptom of a life that is not spiritually minded–that is still under the power of the self and the world. Let us practice our daily need to meditate and focus on the silence to gain our true spiritual nature.

Let the sight of everyone needing help, every stirring in the heart of compassion, every missed opportunity of our own inadequacy to bless others, every challenge in the way of getting our answers, all merge to us to do one thing: with dedication and pure intention ask the Universe to hear your pleas.

We have failed in our society, we must now do our utmost to train a young generation of light workers to profit by our mistakes and improve the vibration of our world. Through focused mediation (a vibration that can only raise good energy), we can make a difference…each of us.

It is not too late for us to make good. We must encourage those who come after us. We must encourage them to enter into focused meditation to improve their world. It is our responsibility and theirs to improve the vibration of our Universe.

Thought for the Day- Buck it Up!

My children use to tell the school nurse not to call me to pick them up from school unless they were bleeding from a major orifice. They would tell her I’d just say to tell them to “buck it up; walk it off!” I wasn’t that bad, but it is a good philosophy to keep us moving when we don’t feel like it on certain days.

However, with crone-dom come a little more wisdom; one hopes.  Be kind to the vessel we call our human body.  It has to last a lifetime. I’ve watched friends, of late, press themselves too hard at the age of wisdom they should know better.  The result extended illness or hospitalization. Love yourself as Mother Nature loves us.  Love yourself enough to be kind to yourself and listen to your body and Nature when it tells you to curb the “tough Diva within”.

Make sure you are taking your daily supplements, eat a cleaner diet, make sure you are drinking your water each day.  I say this because I’m down in the energy department right now and I realize I’ve been doing none of the above.  I’m at work feeling poorly but I had to tell myself to…” buck it up and walk it off!” So liquid fast for 3 days to detox the system, at least 1/2 hour a day in nature (weather permitting), and focused mediation to clear the dust bunnies out of the attic of my contaminated mind.

It helps to remember that the world is  still a wonderful place.   I need to get out in Nature to get a real energy fix.  Here is hoping your week is filled with Nature, Love and Joy.

Easy Chicken Pasta Alfredo


Time: 40 m    Serves 6

  • 1 tablespoon vegetable oil
  • 1 Box Fettucini or penne pasta
  • 4 skinless, boneless chicken breast halves, cubed
  • 3 tablespoons butter
  • 1/2 pound sliced fresh Cremini mushrooms
  • 3 cloves of minced garlic, or to taste
  • 2 cups heavy whipping cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup grated Mozzarella
  • 4 tablespoons chopped fresh flat leaf parsley (Reserve 1 Tbsp for garnish)
  • 1 teaspoon Kosher salt


  • Prep15 m; Cook25 m; Ready In 40 m
  1. Bring a large pot of lightly salted water to a boil. Add pasta. Cook, stirring occasionally, until pasta is hot, about 8 minutes for aldente. Drain.
  2. Heat vegetable oil in a large skillet over medium heat; cook and stir chicken breast in hot oil until no longer pink in the center, about 10 minutes. Remove from heat.
  3. Melt butter in another skillet over medium heat; cook and stir mushrooms and garlic until mushrooms begin to soften, about 3 minutes. Stir heavy cream into mushrooms and bring to a boil. Reduce heat to medium-low and simmer until slightly thickened, about 3 minutes. Add Parmesan and Mozzarella cheese, parsley, and salt. Continue to cook until cheese is melted, about 1 minute.
  4. Stir pastai and chicken into mushroom-cream sauce. Simmer until heated through, about 2 minutes.

Is it just me?

I’m just getting over a cold that didn’t happen.  I started taking my elderberry extract, mega doses of vitamin C and olive leaf extract and warded off a full blown cold.  Is it just me or do we too often ignore those natural healing herbs and remedies that keep us on systematic track?

I use to have an immune system of a Goddess and just never got sick in the first place.  However, the geographic/demography of my current locale seems to have impacted my immune system.  So, I go to nature for the help I need, and it seems to work every time.  It’s all out there for the taking; instead of taking hours in a doctors waiting room with more sick people, I choose to fight with what God and nature have given us.  It is a lot believe me.  Or don’t believe me; research yourself and give things a try …one step at a time.

Most of my friends in California use alternative healers and doctors of oriental medicine in combination with traditional doctors if needed.  Medical facilities out West are more tuned in with alternative medicines than here in the South I find.  It just feels so good to be back on track, and feeling good without sitting for hours in a sick facility and spending hundreds on chemical pharmaceuticals that work a number on the system as well.

Recipe of the Day-OMG Cupcakes

Oven 325* Yields 24-30 Cupcakes


3/4-Cup         Semi-sweet Chocolate Morsels

1 Cup              Sweet Butter

1 Tsp.              Vanilla

1 ¾ Cup         Sugar

¼ Tsp.           Salt

1 Cup               All Purpose Flour

4                       Eggs

Melt butter and chocolate in microwave or double boiler . Remove from heat and add sugar. Stir in eggs, one at a time , add vanilla, then flour and salt stirring only until just blended.   Fill Cupcake liners 2/3 full of batter, should yield 30 cupcakes.


½ Cup            Sour Cream

½ Cup            Cream Cheese; softened

½ cup             Peanut Butter

½ Cup            Sugar

1 Tsp.               Vanilla

¼ Tsp.             Salt

½ Cup            Semi-sweet Chocolate Chips

1 Egg

Mix all ingredients except chocolate chips until creamy. Add in the chips, stirring gently. Then drop a heaping spoonful into the center of each cupcake. Bake at Oven 325* for 25 minutes. Yields 24-30 Cupcakes.


4 Tbsp            Butter

6 Tbsp.           Peanut Butter

3 Cups            Confectioner Sugar

2 Tsp.              Vanilla

Heavy Cream as needed

Blend butter , peanut butter and vanilla with mixer, then blend in sugar. Add cream until desired consistency obtained (begin one tablespoon at a time).

Note: The cupcakes sink when cooled so use the frosting to level them and make them prettier. Kelly also suggests these Variations:

Nutella instead of peanut butter (for those with peanut allergy). You may choose raspberry preserves. If using preserves eliminate sugar from the cheesecake filling. Increase bake time on raspberry variation by 5 minutes.

Unconditional Love

Light-workers of the world (and you know who you are) shine on!  I’ve noticed more and more that the …”milk of human kindness” is getting more sour over time.  It is our job to put our light out in the world every single day and make it a better place.

We are all connected.  There is no getting around that simple fact.  As such we owe it to each other and the planet to vibrate/shine in the best possible way we can at all times.  Our thoughts create our world.  Are you the person hanging dirty canvases up on the wall of the world’s gallery?

All Universal Teachers tell us to love one another. They speak of love to one another as abiding in the light.  When we abide in the light, we do not stumble, and we light the way for all humankind.  Be that light!  Don’t do what the world does.  Choose to be the pure soul your internal vibration is speaking to at all times.  God made us all perfect reflections of His being.  Only we can dull that vibration/light and dim the light in the Gallery of Life.
