Diva Musing- Blessings

Today I was so pleased to tell a young girl that we could give her a scholarship to a private private school in the area.  I knew it would put a strain on the budget but she was in need and it had to be done.   

As always, the Universal God Source…within 10 minutes of our notifying the child’s grandmother of the good news…. provided a wonderful person to start chatting with me in a store and who knew of my non-profit work.  She asked if she could donate a scholarship, for a needy child, to the program. Talk about an immediate blessing!!!!  It doesn’t get better than this.  

Diva Tasting-Avocado Fries

INGREDIENTS

  • 3 avocados, sliced
  • 1/2 c. ranch
  • Juice of 1/2 lime
  • 1/2 c. panko bread crumbs
  • kosher salt
  • Freshly ground black pepper
  • Extra-virgin olive oil, for drizzling

Preheat oven to 375 degrees F. In a medium bowl, stir together 1/4 cup ranch dressing and lime juice.

Dip each avocado slice in ranch, then in panko bread crumbs, coating all over. Transfer to a parchment-lined baking sheet.

Season avocado fries with salt and pepper and lightly drizzle with olive oil.

Bake until golden, 20 to 25 minutes.

Diva Tasting-Chicken Cordon Bleu II

Oven 375° Serves 4          Ingredients

  • 4 Skinless, Boneless Chicken Breast Halves Pounded To 1/4 In Thickness
  • 1/4 Teaspoon Sea Salt
  • 1/4 Teaspoon Ground Black Pepper
  • 1pkg Baby Spinach Rinsed
  • 4 Slices Swiss Cheese
  • 4 Slices Provolone Cheese
  • 4 Slices Cooked Ham
  • 1/2 Cup Seasoned Panko Bread Crumbs

Directions

  1. Preheat oven to 375 degrees F. Coat a 9 x 13 inch baking dish with nonstick cooking spray.
  2. Pound chicken breasts to 1/4 inch thickness.
  3. Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 each of the cheese slices, 1 ham slice and 5 spinach leaves on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
  4. Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove toothpicks, and serve immediately.

 

Diva Musing-The World Around Us

I’ve been working with some of the students who want to make a difference in our world. They want to volunteer with worthy community non-profits to help people and animals.  We focus so much on the chaos in the world but we don’t get to see the individuals who make a difference one at a time in their own small pockets of Americana.  

It is so good to see the youth still trying to care in a world where the only hope given to them by the liberal media is….oh wait they give no hope; only “H.I.P.E.” (Hate Inducing Pandering and Exaggeration).  It is what brigs ratings after all.  

Just know my divas….there are pockets of people out here in Divaland who care, want to make a difference, bring light to others.  They are the ones who add, in a significant way, to the collective conscious in a very positive way.  They are our only hope. Pray for them, honor them, celebrate them in your lives and your communities.

Diva Musing-Life!

Life is good everyday!  Face it, it all depends on how you look at things. Today the sky is a perfect blue, the air is crisp and clear. Today I am healthy and joyful.  Today I got to spend time with good friends and my puppies.  

What’s your life like today? We’d really like to know!

Diva Rambling-Nature

I read an article this morning about nature walks and how they are now being looked at by main stream medical professionals as healing….duh!!!!  How long have we known this?  How long have our own spirits been telling us this?  Me, since childhood.  How about you?

Connecting with Mother Nature is one of the best medicines one can give the spirit.  Love her, enjoy her, absorb her in every way you can.  DO NOT ABUSE HER!  The Karma Cops have a special way of rewarding dick heads that abuse nature. 

Take a healing walk into the wood (not alone these days) but take the walk this weekend…weather permitting.  Happy Healing for the weekend.

Diva Musing-The Children

How to start your day. I took my 6 year old great-niece to breakfast this morning. She had her favorite; pumpkin pancakes. There is no better way to make sure you have a good day than to take quality time with a little one. The sparkle in their eyes, the belly laugh at every stupid thing we say, the giant smile when the pumpkin pancakes arrive at the table. Do yourself a favor… spend extra time to love a little one today, and see how much better your life goes all day.

The Universe knows and will reward you; but the reward of just doing it is healing and ethereal. My only regret was her mom had no sense of humor when I suggested she skip school and help me in the office all day. Bummer! Bad Auntie! LOL, I tried.

I’m already looking forward to fall break and the Divafest we are planning one day. I feel a Diva Tea Party Coming on! How is your fall going?
