Chicken, Sausage, Potatoes and Artichokes
Ingredients
  • 4 Large Link Italian Sausage Sliced on Bias
  • 2 Tablespoons Olive Oil, Divided
  • 8 Bone-In, Skin On Chicken Thighs
  • 2 Jars Marinated Artichoke Chopped
  • 1 Small Red Onion, Sliced
  • 1 Bunch Green Onion, Sliced(Including Greens)
  • 4 Package Yukon Gold Fingerling Potatoes
  • 2 Teaspoons Dried Italian Herbs
  • 2 Teaspoons Kosher Salt, Plus More As Needed
  • Freshly Ground Black Pepper To Taste
  • Chopped Fresh Italian Parsley
Directions
Preheat oven to 450 degrees F (230 degrees C).
Heat olive oil in a skillet over medium heat. Cook sausage links until browned and oil begins to render, about 3 minutes. Remove from heat and let cool slightly. Remove to a small bowl.
Cut two slashes down to the bone on the skin side of each chicken thigh.
Place Artichokes in a large bowl. Add the sliced red and yellow onions and potato chunks. Add chicken thighs and sausage pieces with pan juices.
Season with kosher salt, black pepper, and Italian herbs. Drizzle with a tablespoon of olive oil.
Mix completely until all ingredients are coated in oil, 3 or 4 minutes. Transfer to large, heavy-duty roasting pan. Evenly space the chicken thighs skin side up, place potatoes on top.
Place in preheated oven until chicken is cooked through and everything is caramelized, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Sprinkle with chopped fresh Italian parsley, if desired.

I was chatting with my son who is a very traditional medical person in the military. He and I were arguing the merits and efficacy of Colloidal Silver. I’ve used it for years. I gargle with it, I drink it, I put cotton swabs up my nostrils and soak them. Nothing viral or bacterial can live in a pure silver environment. Doctors and Pharmaceutical companies don’t want us to know that. But years ago our old mountain Eye, Ear, Nose and Throat specialist recommended it for ear aches and other infections. If you ask your own doctor they will poo-poo it as did my son.

I said “you all are using silver bandages in hospitals now to prevent infection, right?” “Yes,” he replied but there is no efficacy to the colloidal silver. “Duh!!!!!!!, Don’t be a ninny. Silver environment is silver environment.” I needed it with that. That is why I prefer more holistic doctors to purely traditional. All I’m saying is, people who know it use it to hedge their bets.

I think I’ve mentioned this before. I had a friend in California who had a foot infection for 6 months. They kept loading her with one radical antibiotic after another. She had lupus and was in pain. I had a friend manufacture a colloidal silver machine for her (the stuff in the stores is useless if more than 20 day old and very expensive).  The machines can be made for about $ 10 plus 3 D cell batteries. With the machine she could maker hers fresh daily. I told her how to use it and after six months of pain it healed in 5 days. Her doctor said that it had nothing to do with it…Ha, Ha, Ha…All I’m saying… there is stuff out there they don’t want us to know about.

The crones are not doctors but wise old women who know and respect the wisdom passed along to us. We use the natural things Nature and the Universe have provided and we respect its efficacy even if no one else does. NOTE: Moderation in all things. The English Royals knew this in ancient times and overdid it (they were the only ones who could afford silver), their skin an irises turned blue…hence the term blue bloods. A couple of tablespoons a day for preventative is all that I take along with swabbing my nostrils. If I feel a sore throat I gargle and spit.  I normally tell you to check with your own doctor but s/he will poo-poo Crone Wisdom.  Research and decide for yourself.

The Crones are waxing nostalgic today. As an elderly person in the USA who has lived the social distant lifestyle for 8 years, I have learned to enjoy the special time to connect with the Universe and all the joys of our modern techno lifestyles. If it is meant to be the Coronus will get me. If not there is no one but the plan of the Divine Universal Source that can get you or keep you.
Read some more. I’ve been Miss Marple-ing and listening to more meditation music. My dogs get an extra massage each day and love it! I’m business as usual. I haven’t hoarded one thing. I always keep an extra case of toilet paper due to my experience with the paper shortage of 1973 in Florida. As a southerner I always have dried beans, potatoes, cornmeal, and I’m still able to get greens and ham hock. Appalachians are very …“little house on the prairie” all the time. And the spoiled pussies who aren’t …Oh well.
I’m now learning the merits of Kudzu as a viable plant source. It is, not only medicinal, but edible. Every part but the vines. You can make baskets, paper, and soap as well as many other practical items from it. I’m threatening to hit the hilltops here and crochet myself a little house from it. LOL!!! It’s everywhere in the south and you can’t kill it. I just got a bottle of Kudzu Extract and tea for blood sugar, and other medicinal uses. Amazon has great Kudzu books with recipes.
I me, seriously, people, find ways. I’m 70 and I refuse to give up. I was MacGuiver before there was a MacGuiver (google him), one of my favorite old TV shows. Now is the time to meet him. Crab Pie Recipe
Ingredients:
2- 9 ″ Deep Pie Crusts (baked 3 Minutes And Cooled)
1-2 Pounds Lump Crab Meat (To Taste)
5 Eggs
3 Tablespoon Flour
1 Cup Mayonnaise
1 Cup Half n Half ®
8 Ounce Shredded Asiago Cheese
8 Ounce Shredded Cheddar Cheese
2 Teaspoons Old Bay Seasoning
1 Tablespoon Finely Chopped Onion
(Note: You Can Use Backfin, It Is Fine. Lump Is The Most Expensive And Not Necessary.)
Instructions:
1 Preheat oven to 350ºF
2 Bake your crust for 3 minutes. We used pre-made pie dough and it worked out great. Spray the pie pans with Pam spray to keep the crust from sticking.
3 Combine eggs, flour, mayonnaise and milk, mix well. Add cheese, 1 teaspoon Old Bay, onion and pepper and mix well.
4 Fold in crab meat and try not to separate the lumps of crab meat too much. Pour into 2 separate pie crusts, sprinkle with additional Old Bay Seasoning.
5 Bake at 350ºF for 50 minutes or until knife comes out clean. (Check at about 40 minutes to avoid burning, since ovens vary.)

Eggplant and Israeli Couscous
Ingredients
  • 2 Medium Eggplants
  • 1 Tablespoon Olive Oil
  • 2 Teaspoons Minced Garlic
  • 3/4 Cup Israeli Couscous, Uncooked
  • 1/2 Teaspoon Allspice
  • 2 Dried Bay Leaves
  • 1 Cinnamon Stick
  • 1 Cup Low-Sodium Chicken Broth
  • 1/2 Teaspoon Salt
  • 1 1/2 Tablespoons Chopped Fresh Parsley
  • 1/2 Cup Crumbled Feta Cheese
  • 1/4 Cup Pomegranate Seeds
  • 1 Sheet Reynolds Wrap(R) Aluminum Foil
Directions
  1. Preheat the oven to 400 degrees F. Cut the eggplants in half lengthwise, wrap each half in a sheet of Reynolds Wrap(R) Aluminum Foil and arrange them on a baking sheet. Roast the eggplants until the centers are soft and tender, about 30 minutes. Unwrap the eggplants and scoop out the center pulp, leaving a 1/2-inch border around the edges of each eggplant. Roughly chop the reserved pulp and set it aside.
  2. Add the olive oil to a medium saucepan set over medium-low heat. Add the garlic and cook, stirring constantly for 1 minute, then add the couscous, allspice, bay leaves and cinnamon stick and cook, stirring constantly, for an additional 2 minutes.
  3. Add the chicken broth and 1/2 teaspoon salt then bring the mixture to a boil. Reduce the mixture to a simmer, cover the saucepan, and cook the couscous until it is tender and the liquid has absorbed, 10 to 12 minutes. Remove the bay leaves and cinnamon stick. Stir in the reserved eggplant, parsley and feta cheese, then divide the couscous mixture evenly among the eggplants.
  4. Arrange the stuffed eggplants on a foil-lined baking sheet and return them to the oven, uncovered, and bake until they are warmed throughout, about 5 minutes. Remove the eggplants from the oven, top them with pomegranate seeds and serve immediately.

From Subtle to Serious

Diva Tasting: Air-Fry Egg Rolls…

Air-fry Egg Rolls 
Ingredients
1 Lb Lean Ground Beef Browned to Crumbly and Drained
4 Green Onions, Thinly Sliced
1 Small Package Slaw Mix
1 Teaspoon Salt
1 Teaspoon Ground Cumin
1 Teaspoon Garlic Powder
1 (16 Ounce) Package Egg Roll Wrappers
Cooking Spray
Directions
  1. Mix salt, cumin, and garlic powder together in a ramekin for the filling.
  2. Brown beef with spices and drain. Cook cabbage and onions in beef drippings and drain.
  3. In a large bowl combine all and mix well.
  4. Lay an egg roll wrapper at an angle. Use your finger to lightly moisten all 4 edges with water. Place about 1/4 cup of the filling in the center of the wrapper. Fold 1 corner over filling and tuck in the sides to form a roll. Repeat with remaining wrappers and mist each egg roll with cooking spray front and back.
  5. Preheat an air fryer to 390 degrees F (199 degrees C). Place egg rolls in the basket, making sure they are not touching; cook in batches if necessary. Fry for 8 minutes; flip and cook until skins are crispy, about 4 minutes more.
Variation: If you do not have an air fryer you may place on a parchment lined baking sheet and spray both sides with cooking oil and bake until golden brown. About 15 Minutes. You may also substitute pop corn shrimp for the beef and prepare the same way.
