Diva Tasting: Seafood Stuffed Mushrooms…

Seafood Stuffed Mushrooms
2 Tablespoons Butter
2 Tablespoons Minced Green Onion
1 Cup Cooked Crabmeat, Finely Chopped
1/2 Cup Dry Bread Crumbs
1/2 Cup Shredded Monterey Jack Cheese
1 Egg, Beaten
1 Teaspoon Lemon Juice
1/2 Teaspoon Dried Dill Weed
1/2 Cup Butter, Melted
2 Pounds Fresh Cremini Mushrooms, Stems Removed
1/2 Cup Shredded Monterey Jack Cheese
1/4 Cup Dry White Wine
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Melt 2 tablespoons butter in a skillet; cook and stir green onion until softened, about 2 minutes. Transfer green onion to a bowl. Stir in crabmeat, bread crumbs, 1/2 cup Monterey Jack cheese, egg, lemon juice, and dill weed until well mixed.
  3. Pour 1/2 cup melted butter in a 9×13-inch baking dish; turn mushroom caps in butter to coat. Fill mushroom caps with the crab mixture and sprinkle with remaining 1/2 cup Monterey Jack cheese. Pour white wine into baking dish.
  4. Bake in preheated oven until cheese is melted and lightly brown, 15 to 20 minutes.

Diva Ranting: Customer Service…

Customer service means going above and beyond to keep the customer happy, whether that means answering any questions they have or resolving issues with a positive attitude. Customer satisfaction is the top priority, and hopefully creating loyal, returning customers.”

Pondering this as I sit on my day off with the flu and pneumonia waiting for the giant corporation to call me back. They promised 45 minutes and I’m now sitting waiting for 1.5 hours. Each call to this mega corporation the service drops exponentially.

I have no patience for this sort of thing. We pay extra for the “ priority service” which states at the top of the service page ….”not available at this time the whole time I’ve had it. In the legal world I use to work in this mass ignoring of paying customers and on a national level is tantamount to racketeering and should be reported to the attorney general to investigate the waste of employers time and expenses on the national volume of employee time usurped each day by endless hold, customer service reps who speak patronizingly to you from their check list of emotions chart and who still take home a pay check after dong zero to assist ones employees. Problem not solved, survey asking how likely you are to recommend their company totally ignored. How many billions of dollars do corporations spend monthly having employees on eternal hold with no results? I vote the attorney general hit these corporations with the full force of the law. We may not get improvements, but the investigation will cost these don’t give a rip companies, something to think about while paying their lawyers to shred documents and hide facts. What say all of you?

Diva Musing: Seasons Viruses…

I flew to see my grandchildren for Christmas and the whole family was sick and had to be hospitalized with flu and pneumonia.  Yours truly is now home recovering as well.  I tell you this, not for sympathy, but for the joyful fact that my soon to be born grandson and mother are doing well.  I want to thank the staff at the hospital for working hard to guard them and keep them safe.  

And a special salute to my son who grabbed the reins and served as chief cook, bottle washer and laundry sanitizer.  It was his first free time from military life in forever and he stepped up like a gentleman and took care of everything.  

I urge everyone to keep drinking fluids, taking vitamins and eating lots of veggies. It’s petulant when it hits and lasts for days. Wishing all the joy of the upcoming new year.
