Diva Tasting: Tomato Shrimp Pasta…

Tomato Shrimp Tortellini Pasta 

Ingredients

  • 16 Ounces Cheese Tortellini Pasta
  • 3 Cloves Garlic
  • 1/2 Sweet Onion, Chopped
  • 3 Tablespoons Fresh Oregano Leaves
  • 4 Tablespoons Olive Oil
  • 4 Medium Roma Tomatoes, Chopped
  • 3 Tablespoons Chopped Fresh Basil
  • Salt And Pepper To Taste
  • 1 Cup Spinach Leaves
  • 1 Pound Cooked Shrimp – Peeled And Deveined
  • 8 Ounces Fresh Mozzarella Cheese, Diced

Directions

  1. Bring a large pot of lightly salted water to a boil. Add the pasta, and cook for 8 minutes, or until tender. Drain.
  2. In the container of a food processor, combine the garlic, onion and oregano. Pulse until finely chopped. Heat the olive oil in a large skillet over medium heat. Add the onion mixture; cook and stir until fragrant and almost golden. Mix in the tomatoes, basil, salt and pepper. Simmer for about 5 minutes while the pasta is cooking, stirring occasionally.
  3. Mix in spinach until it wilts, then just before the pasta is done, stir in the shrimp. Cook until heated through. Toss with pasta in a large serving bowl, and mix in mozzarella cheese.

Diva Tasting: Scalloped Potatoes…

Scalloped Potatoes
Serves 8

Ingredients

  • 3 Pounds Yukon Gold Potatoes, Peeled (optional) And Sliced ⅛-Inch Thick
  • 2 Cup Shredded Sharp Cheddar Cheese, Divided
  • 1 Cup Grated Parmesan Cheese
  • 1 Cup Grated Asiago Cheese
  • 4 Tablespoons Butter
  • 1 Medium Onion, Diced
  • 4 Cloves Garlic, Minced
  • 3 Tablespoons All-Purpose Flour
  • 3 Cups Half N Half
  • 1 Teaspoon Kosher Salt
  • ½ Teaspoon Black Pepper
  • ¼ Teaspoon Grated Nutmeg
  • 1½ Tablespoons Fresh Thyme, Divided

Preparation

  1. Preheat the oven to 400°F Grease a 9×13 baking dish with butter and set aside.
  2. Using a mandoline slicer or a sharp knife, slice the potatoes to ⅛-inch thick. (If you’re using a knife, try to cut the slices as evenly as possible.
  3. Spread a third of the sliced potatoes in an even layer in the prepared baking dish.
  4. In a small bowl, combine the cheeses and mix them well. Reserve 1 cup for the topping and set it aside.
  5. Prepare the sauce: in a large sauté pan over medium-high heat, melt the butter. Add the onion and cook until it’s translucent, about 4-5 minutes. Add the garlic and cook until it’s fragrant, about 30 seconds. Add the flour and stir while cooking for another 1 – 2 minutes. Add the Half N Half, salt, pepper, nutmeg and 1 tablespoon of the thyme. Bring to a simmer and whisk until combined and thickened. Add the 1¾ cups of the cheese blend and stir until the cheese is melted and the ingredients are completely mixed. Turn off the heat and set the sauce aside.
  6. Pour a third of the cheese sauce over the potatoes, and spread it out evenly with a spatula. Spread the next third of potatoes in the baking dish and top it with another third of cheese sauce. Repeat the layering process with the remaining potatoes and sauce. Top the final layer of sauce with the reserved ¾ cup of cheese.
  7. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake uncovered for an additional 25 -30 minutes, or until the potatoes are cooked through and the sauce is bubbling. Sprinkle with the remaining fresh thyme and serve warm.

A Life Fulfilled

At one point in my life I finally matured enough to notice that the Universe/Source Power had given me anything I wanted or needed (only if it was for the greater good). But I also noticed that it was only if I had been wanting it with a passion and believing it was mine in the first place. “Belief” is a wonderful catalyst for creating anything and everything, everyday. A few keys to manifesting all that the Source Power wants you to have are as follows…

  • Define what you want, even if you don’t know what your life passion is…

  • Act “as if” you’ve already achieved it ( see it, feel it, taste it) like you have it now

  • Break through all limiting beliefs and ignore others who have them

  • Take action in specific directions toward your dream while preserving all options

  • Think beyond “a jobto creating a life that’s in alignment with your passions and the Universe

  • Don’t Hope….”Know” for those with the knowing are the most blessed

The One Source Power/Universe created us with the “Knowing” that it helps those who help themselves. The Universe acts in co-creation to manifest your thoughts. You must

guard what those thoughts are at all times.

Diva Tasting: Not Tuna Casserole…

Not Tuna Casserole…

Ingredients:

  • 1 Lb Halibut, Cooked According To Package Directions
  • 2 Cups Rice, Cooked According To Package Directions
  • 2 Cans Cream Of Mushroom Soup
  • 1 Cup Cream
  • 1 Cup Asiago Cheese, Shredded
  • 1 Teaspoon+ No Salt Seasoning Blend
  • Black Pepper, To Taste
  • 1/2 Sleeve Butter Crackers, Crushed

Directions:

  1. Preheat oven to 400 degrees. Spray a 9×9 baking dish with non-stick spray.
  2. In a large bowl mix cream of mushroom soup, cream, cheddar cheese, and Morton Seasoning salt until well blended. Once noodles are cooked and drained add them to the soup mix and stir until well coated. Add halibut, broken into small chunks, to the rice and fold in well.
  3. Pour mixture into prepared pan. Sprinkle with crushed crackers and bake for 20 -25 minutes until top is browned and center is heated through.
  4. Remove from oven and serve.

SEAFOOD CASSEROLE

Ingredients

  • 1 Onion, Chopped

  • 1 Cup Butter, Divided

  • 1 Cup All-Purpose Flour, Divided

  • 1 Pound Fresh Crabmeat

  • 4 Cups Water

  • 2 Pound Fresh Shrimp, Peeled And Deveined

  • 1 Pound Small Scallops

  • 1/2 Pound Flounder Fillets

  • 3 Cups Half n Half

  • 1 Cup Shredded Manchego Cheese

  • 1/2 Cup Shredded Gruyere Cheese

  • 1 Tablespoon Distilled White Vinegar

  • 2 Teaspoon Worcestershire Sauce

  • 1 Teaspoon Kosher Salt

  • 1/2 Teaspoon Ground Black Pepper

  • 3 Dashes Hot Pepper Sauce

  • 1 Cup Grated Parmesan Cheese

  • 2 Cup Prepared Long Grain White Rice

Directions

  1. In a heavy skillet, saute the onion and the pepper in 1/2 cup of butter. Cook until tender. Mix in 1/2 cup of the flour, and cook over medium heat for 10 minutes, stirring frequently. Stir in crabmeat, remove from heat, and set aside.

  2. In a large Dutch oven, bring the water to a boil. Add the shrimp, scallops, and flounder, and simmer for 3 minutes. Drain, reserving 1 cup of the cooking liquid, and set the seafood aside.

  3. In a heavy saucepan, melt the remaining 1/2 cup butter over low heat. Stir in remaining 1/2 cup flour. Cook and stir constantly for 1 minute. Gradually add the half n’ half, plus the 1 cup reserved cooking liquid. Raise heat to medium; cook, stirring constantly, until the mixture is thickened and bubbly. Mix in the shredded cheeses, vinegar, Worcestershire sauce, salt, pepper, and hot sauce. Stir in cooked seafood and rice. Fold until combined.

  4. Preheat oven to 350 degrees F. Lightly grease one 9×13 inch baking dish.

  5. Spread the rice and seafood onto the bottom of the pan. Top with crabmeat and Parmesan Cheese

  6. Bake in the preheated oven for 30 minutes, or until lightly browned. Serve immediately.

  7. Serve with Spring Salad with lemon vinaigrette and sauteed green beans.
