Diva Tasting- Vegge Cobbler

Oven 400° Serves 8 9”X 13” Baking Pan (Greased)

3 Med Zucchini, chopped

2 Med Squash, Chopped

1 Lg Onion White Chopped

2 Cup 3 Cheese Shredded

4 Lg Garlic Cloves Minced

1 Cup Half n’ Half

4 Tbsp Real Butter

2 Tbsp All-Purpose Flour

1 Tsp Salt

½ Tsp Dry Basil

½ Tsp Oregano

½ Tsp Hot Sauce

½ Tsp Fresh Cracked Black Pepper


1 pkg Cheddar Bay or Red Lobster Biscuit Mix

1 Cup Cold Water

1 Cup Sharp Cheddar Cheese

2 Tbsp Real Butter

1 Lg Clove Garlic Minced


Heat oven spray Cooking Pan

Whisk together flour and milk in medium bowl, Season to taste with salt and pepper. Set Aside

Heat Butter in a skillet over medium high heat saute all vegetables in the butter until softened

Add Garlic and stir for one minute

Add flour mixture and bring to simmer and transfer to baking dish/pan


Stir together biscuit mix with milk and cheese until dough comes together.

Spread the topping gently over the vegetable mixture and cover with foil

Bake for 20 minutes, uncover and bake for 10 more minutes until brown

While cobbler finishes baking melt butter and garlic in microwave cup 30 seconds

Remove Cobbler and brush with melted garlic buttered

Serve immediately. You may add 3 cups of chopped rotisserie chicken or 1 lb cooked, crumbled bacon for non-vegetarian option.
