Chicken Casserole with a Mexican Twist


8-10 Servings 350° Oven 9”X13” Pan

  • 4 Tsp Olive Oil
  • 1 Cup Sour cream
  • 2 Cups Cheddar Cheese Shredded
  • 1 Cup Pepper Jack Shredded
  • 3 cups Cremini Mushrooms; (fresh sliced)
  • 1 Pkg Dry Taco Seasoning
  • 2 (16 ounce) Jars Mild Salsa
  • 2 Cups Cooked White Rice
  • 1 Med Rotisserie Chicken Boned and Diced (may use 16 oz of chicken breast boned and diced)

In a skillet, heat oil over medium heat. Saute mushrooms sprinkle 1 package of taco season on mushrooms and combine. Combine mushrooms, sour cream, cheese, salsa, rice, the last package of taco seasoning, and chicken. Place in a greased casserole dish. Bake at 350 degrees F (175 degrees C) 35 minutes.
