Greens, Sausage & Cannellini Bean Stew
1 Tbsp Olive Oil
4 3-oz. Cooked Chicken or Turkey Sausages Sliced
2 Med Onion Cut into Wedges
1 Lg 16 Oz Can of Cannellini Beans Drained
2 Tbs Fresh Thyme Leaves
3 Cloves Garlic Minced
1 Quart Chicken Stock
12 Cups Kale or Spinach (Appx 7 oz.)
2 Tbsp Balsamic Vinegar
In a large skillet add oil, onion and heat until brown (6-8 Min). Remove skillet; set aside.
In a large stew pot on medium high heat …Add beans, thyme, and garlic to the pot; cook 1 minute until warm. Add broth; bring to a boil. Add greens gradually; tossing until wilted before adding more. Cook and stir 2-3 minutes until cooked through. Add sausage mixture and vinegar; heat to simmer. Add a cup of water and simmer for one hour. Serve with corn bread or garlic crostini.
